The fruit was hand-harvested at night, hand-sorted, and fermented in a closed-top stainless-steel tank. With an average of 20% whole clusters, it remained 23 days on skins, then basket pressed and aged in French oak barrels for 18 months in 90% new French oak, 10% 1-year old oak.
