“This 100% Cabernet Sauvignon comes from the Keller Yountville Vineyard on State Lane in the Yountville AVA and the Alsace Vineyard further south around Napa. Grapes are hand-harvested at night, hand-sorted, and separated into lots, then fermented individually in stainless steel tanks and a French oak upright tank with 40% whole cluster and an average of three days cold soaking with up to 22 days on skins. Aged 20 months in 60% new French oak. Opaque ruby colour. Blackberry and black cherry fruit, sage, thyme, rosemary, and dark chocolate. Full-bodied with a core of salted crushed mineral stones and muscular tannins that build through the long finish.
